Raspberry, Chocolate & Walnut Muffins
A friend passed me this recipe for raspberry choc muffins from her mum, Danielle Juraga MP (may searches for her name forever be dominated by this recipe). I made some minor adjustments, and here it is, as another friend asked for it.
These muffins are not too sweet and have a nutty texture that offsets the sweetness.
Makes 12 muffins.
Ingredients
- 2 cups (300 g) plain flour
- 2 tsp baking powder
- ¼ tsp baking soda
- ¾ cup (150 g) dark brown sugar
- ¼ tsp salt
- 1 ½ cups (160 g) frozen raspberries
- ½ cup (60 g) roughly chopped walnuts
- ½ cup (90 g) white chocolate chips
- ½ cup (90 g) dark chocolate chips
- 1 large egg
- ¾ cup (180 ml) buttermilk
- ½ cup (120 ml) neutral vegetable oil (or melted butter)
- 1 tsp vanilla extract
Method
- Preheat oven to 180 °C fan-forced. Line a 12-hole muffin tin with paper cases.
- Combine dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, and brown sugar until evenly mixed.
- Combine wet ingredients: In a separate bowl (keeping it separate for now), whisk together egg, buttermilk, oil, and vanilla until smooth.
- Add mix-ins to dry ingredients: Gently stir in raspberries, walnuts, and both chocolate chips. (Coating them in flour helps prevent sinking.)
- Mix batter: Combine the mix-ins with the dry ingredients. Then, pour the wet ingredients into that mixture and fold gently with a spatula until just combined. The mixture should be slightly lumpy—avoid overmixing to keep muffins tender.
- Bake: Divide batter evenly among muffin cups. Bake for 22–24 minutes, or until the tops are golden and a skewer inserted in the centre comes out clean.
- Cool: Rest in the pan for 5 minutes (in the oven with the door open if you wish, to really ensure they cook through), then transfer to a rack to cool.

You can make a lighter version using monkfruit sugar, 100ml oil, and half wholemeal flour instead of plain flour, and that would be 280 kcal… splitting hairs, here. It’s a bloody cake.
